BBQ Kofta-Spiced Chicken

You Will Need

  • 1 lemon

  • 2 tablespoons of kofta seasoning

    • 1 tsp ground cumin

    • 1 tsp ground coriander

    • ½ tsp ground cinnamon

    • ½ tsp ground allspice

    • ½ tsp ground black pepper

    • ½ tsp salt (adjust to taste)

    • ½ tsp ground cardamom (optional)

    • ¼ tsp ground nutmeg

    • ¼ tsp chilli flakes (optional, for heat)

    • ½ tsp garlic powder

  • 200g chicken breast

  • 2 vegetable stock cubes

  • 150g couscous

  • 1 cucumber

  • 2 roma tomatoes

  • 1 bunch parsley

  • 2 tablespoons mayonaise

  • 2 tablespoon olive oil

  • 200ml boiling water

How To Make

1.Prep Ingredients

  • Preheat barbecue or frypan.

  • Halve the lemon

  • Dice chicken breast into 1cm pieces

  • Make

  • Combine 1 tablespoon of kofta seasoning and 1 tablespoon of olive oil in a large bowl and season with salt and pepper.

  • Add the chicken to the seasoned oil and turn to coat.

2. Soak Couscous

  • Crumble 1 stock cube* into a heatproof jug, add 200ml boiling water and stir to dissolve.

  • Put the couscous in a large heatproof bowl, add 2 tsp extra virgin olive oil, pour over the stock and cover with a plate

  • Stand for 5 mins or until the water is absorbed.

  • Fluff the couscous with a fork.

3. Cook Lemon and Chicken

  • Meanwhile, cook the lemon, cut-side down, on the barbecue grill for 6-8 mins until charred.

  • Cook the chicken on the barbecue grill, turning occasionally, for 8 mins or until golden and charred. Remove the lemon and chicken from the grill.

4. Make the Lemon Dressing

  • Squeeze 2 tbs juice from the charred lemon into a large bowl.

  • Add 2 tsp extra virgin olive oil, season with salt and pepper and stir to combine.

5. Make Tabouleh

  • Finely chop the cucumber, tomatoes and parsley, including the parsley stems.

  • Add the couscous, cucumber, tomato and parsley to the lemon dressing and toss to combine.

  • Taste, then season with salt and pepper.

6. Serve

  • Put the mayonnaise, remaining kofta seasoning and 1 tsp water in a bowl and stir to combine.

  • Divide the tabouleh and chicken among plates.

  • Drizzle with the kofta mayonnaise to serve.
