Protein Brownies (Vegan & Gluten-Free)
You Will Need:
For the brownies
1½ cups mashed overripe banana
¾ cup peanut butter (or almond butter)
⅓ cup cocoa powder
⅓ cup chocolate protein powder
2 teaspoons vanilla extract
¼ teaspoon salt
½ cup chocolate chips
For the frosting
1 ripe banana
2 tablespoons cacao powder
1 teaspoon vanilla extract
Pinch of salt
Additional chocolate chips for topping
How to Make:
Preheat Oven: Set your oven to 175°C. Line a 7×7 or 8×8-inch square baking dish with parchment paper.
Prepare Brownie Batter: In a large bowl, combine the mashed banana, peanut butter, cocoa powder, chocolate protein powder, vanilla extract, and salt. Mix until thoroughly combined. Fold in the chocolate chips.
Bake Brownies: Pour the batter into the prepared baking dish, spreading it evenly. Optionally, sprinkle extra chocolate chips on top. Bake for 25 to 30 minutes, or until the brownies are set. Let them cool completely in the pan.
Make the Frosting: In a blender or food processor, blend the ripe banana, cacao powder, vanilla extract, and salt until smooth and creamy.
Frost the Brownies: Once the brownies have cooled completely, spread the Chocolate Banana Frosting evenly over the top.
Add Final Touch: Sprinkle additional chocolate chips over the frosting.
