Tofu Scramble

You will need:

  • 1 block firm tofu (or extra-firm)

  • 1 tbsp olive oil

  • 1/2 onion, diced

  • 1 capsicum, diced

  • 1/2 carrot, grated

  • 1/2 small zucchini, grated

  • 2-3 button mushrooms, sliced

  • 2 garlic cloves, minced

  • 1 cup spinach, chopped

  • 1 tsp turmeric

  • 1 tbsp nutritional yeast

  • 1 tsp dried oregano

  • Salt & pepper, to taste

  • (Optional: pinch of black salt for eggy flavour)

  • Optional: bread of choice, sliced avocado and chopped cherry tomatoes to serve

How to make:

  1. Dice the onion and capsicum, grate the carrot and zucchini and mince the garlic.

  2. Heat the oil in a large skillet over medium heat. Add the onion, capsicum, carrot, zucchini, mushrooms and garlic. Cook for 3-4 minutes until softened.

  3. Crumble the tofu into the pan and mix well.

  4. Add the spinach. Stir until the spinach wilts and everything is combined.

  5. Season with turmeric, nutritional yeast, oregano, salt, and pepper. Stir well and serve either on its own or on top of bread of choice with sliced avocado and fresh tomato
