Chickpea Quinoa Salad

You Will Need

  • 1 cup quinoa

  • 1 cup chickpeas

  • 1 cup chopped cherry tomatoes

  • 2 cups chopped mixed lettuce

  • ½ cup diced cucumber

  • ½ cup diced capsicum

  • ¼ cup diced onion

  • ¼ cup sweet corn

  • 1 avocado

  • Fresh parsley

Dressing

  • ¼ cup olive oil

  • 1 lemon juiced

  • 1 tablespoon nutritional yeast

  • 1-2 cloves of minced garlic

  • Salt and pepper

How To Make

  • Cook quinoa according to packet directions.

  • Once cooked, sit aside to cool to room temperature.

  • Dice all vegetables and add to quinoa along with rinced chickpeas

  • Make up dressing and toss salad to combine.

  • Pop salad on a bed of mixed greens to serve and top with diced avocado, feta, pumpkin seeds and fresh parsley

  • Serve alongside your favourite protein
