Chickpea Quinoa Salad
You Will Need
1 cup quinoa
1 cup chickpeas
1 cup chopped cherry tomatoes
2 cups chopped mixed lettuce
½ cup diced cucumber
½ cup diced capsicum
¼ cup diced onion
¼ cup sweet corn
1 avocado
Fresh parsley
Dressing
¼ cup olive oil
1 lemon juiced
1 tablespoon nutritional yeast
1-2 cloves of minced garlic
Salt and pepper
How To Make
Cook quinoa according to packet directions.
Once cooked, sit aside to cool to room temperature.
Dice all vegetables and add to quinoa along with rinced chickpeas
Make up dressing and toss salad to combine.
Pop salad on a bed of mixed greens to serve and top with diced avocado, feta, pumpkin seeds and fresh parsley
Serve alongside your favourite protein
