Blueberry Oat Bake

You Will Need:

  • 2 cups rolled oats

  • 1 cup vanilla protein powder

  • 2 cups unsweetened almond milk

  • ½ cup peanut butter

  • 2 large eggs (or substitute with 2 flax eggs: 2 tablespoons ground flaxseed + 6 tablespoons water)

  • ¼ cup yacon syrup or maple syrup

  • 2 tablespoons melted coconut oil

  • 1 teaspoon vanilla extract

  • ½ teaspoon salt

  • 1 cup fresh blueberries

How to Make:

  1. Preheat your oven to 190°C and grease an 8x8-inch baking dish.

  2. In a large bowl, mix together the oats and protein powder.

  3. Add the almond milk, peanut butter, eggs, maple syrup, melted coconut oil, vanilla extract, and salt to the oat mixture. Stir until well combined.

  4. Gently fold in the fresh blueberries.

  5. Pour the mixture into the prepared baking dish, spreading it evenly.

  6. Bake for 35-40 minutes, or until the top is golden and the center is set.

  7. Remove from the oven and let it cool slightly before serving.

  8. Serve with greek yoghurt and fresh berries
