High Protein Muffins
You will need:
2 ripe bananas
1/2 cup cashew butter (or nut butter of choice)
1/4 cup yacon or maple syrup (or preferred sweetener)
1/2 cup plant-based milk
1 tsp vanilla extract
1 1/2 cups oat flour (blitz up oats in a blender to make oar flour)
1 tsp baking powder
1/2 tsp baking soda
How to make:
Mash the bananas until smooth.
Stir in the cashew butter, maple syrup, plant milk, and vanilla extract.
Mix in oat flour, protein powder, baking powder, and baking soda.
Spoon batter into muffin tin, filling ¾ of the way.
Bake at 180°C for 25-30 minutes, or until a toothpick comes out clean.
Let muffins cool in the tray for a few minutes, then transfer to a rack to cool fully.
