High Protein Banana Bread
You will need:
2 ripe bananas (overripe for extra sweetness)
1 cup milk of choice (e.g., almond milk)
1 tablespoon Apple Cider Vinegar
1 teaspoon Vanilla extract
2 cups self-rising flour
1/2 cup almond flour (blanched)
1/4 cup vanilla protein powder
1/2 cup coconut sugar
Crushed walnuts (to add to the top)
How to make:
Prepare the batter: In a large bowl, mix the wet ingredients. Add dry ingredients and combine until smooth.
Bake: Pour the batter into a greased loaf pan and top with walnuts. Bake at 180°C (350°F) for 45-50 minutes, or until a skewer comes out mostly clean.
