High Protein Banana Bread

You will need:

  • 2 ripe bananas (overripe for extra sweetness)

  • 1 cup milk of choice (e.g., almond milk)

  • 1 tablespoon Apple Cider Vinegar

  • 1 teaspoon Vanilla extract

  • 2 cups self-rising flour

  • 1/2 cup almond flour (blanched)

  • 1/4 cup vanilla protein powder

  • 1/2 cup coconut sugar

  • Crushed walnuts (to add to the top)

How to make:

  1. Prepare the batter: In a large bowl, mix the wet ingredients. Add dry ingredients and combine until smooth.

  2. Bake: Pour the batter into a greased loaf pan and top with walnuts. Bake at 180°C (350°F) for 45-50 minutes, or until a skewer comes out mostly clean.
