Shredded BBQ Tofu Tacos
You will need:
For BBQ Tofu:
350g extra firm tofu
1 tbsp tomato paste
1 tbsp olive oil
1 tbsp soy sauce
1 tbsp maple syrup
1/4 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp chili powder
1/4 tsp sweet paprika
For Pico de Gallo:
3 roma tomatoes
1/2 red onion
1/2 lime, juiced
Handful of fresh cariander
Salt, to taste
Other Ingredients:
8 mini high-protein tortillas
Guacamole
Lime wedges, to serve
How to make:
BBQ Tofu:
Preheat oven to 180°C (355°F).
Drain tofu, pat dry, and grate into shreds using a cheese grater.
Mix all the seasonings in a small bowl, then drizzle over the tofu and toss to coat.
Spread tofu on a lined baking sheet and bake for 15 minutes, tossing halfway through.
Pico de Gallo:
Dice tomatoes, red onion, and chop coriander. Combine in a bowl.
Add lime juice and salt, then mix well.
Assemble:
Warm tortillas in a skillet for 1 minute on each side until golden.
Add guacamole, BBQ tofu, and pico de gallo to each tortilla.
Serve with lime wedges and enjoy!
