Pesto Fried Eggs

You will need:

  • 2 tablespoons pesto

  • 2 large eggs

  • 2 slices sourdough bread

  • 2 to 3 slices tomato

  • Fresh basil leaves, for topping

  • Flaked sea salt and freshly ground black pepper

How to make:

  1. Turn the oven to its broiler setting and position a rack in the middle.

  2. Heat pesto in a nonstick skillet over medium heat for 1 minute.

  3. Crack the eggs into the pesto and cook to your liking (4–7 minutes).

  4. Toast sourdough toast

  5. Top the toast with sliced tomato, basil leaves, and the eggs. Sprinkle with salt and pepper.
