Eggs on Toast
You Will Need:
2 slices of your choice of bread (sourdough, whole grain, gluten-free, etc.)
2 eggs (or more, depending on servings)
1 tablespoon butter or olive oil
Salt and pepper, to taste
Fresh herbs (optional, for garnish)
For Fried Eggs:
Butter or oil (for frying)
A pinch of paprika (optional)
For Scrambled Eggs:
2 tablespoons milk or cream (optional for creaminess)
1 tablespoon butter
For Poached Eggs:
1 tablespoon vinegar (optional, to help the egg whites set)
Veggie Add-Ins:
Rocket, spinach, or arugula (for a fresh topping)
Sautéed mushrooms, cherry tomatoes, or spinach (to serve on the side)
Avocado slices (for added creaminess)
Sautéed onions, bell peppers, or zucchini (for added texture and flavor)
How to Make:
1. Toast the Bread
Start by toasting your slices of bread to your preferred level of crispiness. While the bread is toasting, you can cook your eggs.
2. Fried Eggs:
Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
Once hot, crack the eggs into the pan. Let them cook until the whites are set and the yolks are still runny (about 2-3 minutes). If you prefer your yolks cooked through, cover the pan and cook for an additional 1-2 minutes.
Season with salt and pepper, and add a sprinkle of paprika if desired.
Serve on top of your toasted bread, and for extra veggies, top with a handful of rocket or spinach.
3. Scrambled Eggs:
Crack the eggs into a bowl, add a splash of milk or cream, and whisk until well combined.
Heat a non-stick skillet over low to medium heat and add the butter.
Pour in the eggs and cook gently, stirring occasionally to create soft curds.
Continue cooking until the eggs are just set (about 3-4 minutes).
Season with salt and pepper to taste.
Serve on top of your toast and add sautéed mushrooms or spinach for extra flavor and nutrients.
4. Poached Eggs:
Fill a saucepan with water, about 2 inches deep, and bring to a gentle simmer over medium heat.
Add a tablespoon of vinegar to the water (optional, helps to keep the egg whites together).
Crack the egg into a small bowl or cup, then gently slide it into the simmering water.
Let the egg poach for about 3-4 minutes until the whites are set, and the yolk is still soft and runny.
Carefully remove the poached egg with a slotted spoon and place it on your toasted bread.
You can also top it with sautéed zucchini or avocado for added texture.
5. Add Veggies and Garnish:
For added nutritional value and flavor, top your eggs on toast with fresh veggies.
Rocket, spinach, or arugula work well for a peppery, fresh taste when added on top of fried eggs.
You can also sauté mushrooms, bell peppers, or tomatoes as a side dish and pile them on your toast along with the eggs.
