Porridge with Stewed Apples
You Will Need
Porridge
1/2 cup rolled oats
1 cup of plant based milk
2 tablespoons of vanilla protein powder
1 tablespoon yacon syrup
1/2 teaspoon of vanilla extract
1/2 teaspoon cinnamon
Stewed Apples
2 apples, peeled, cored, and chopped into small pieces
1 tablespoon grass-fed butter or coconut oil
1 tablespoon yacon syrup
1 teaspoon ground cinnamon
Pinch of nutmeg (optional)
1/4 cup water
How To Make
Porridge:
In a saucepan, combine the oats, milk, protein powder, salt, honey/maple syrup, and vanilla extract (if using).
Cook over medium heat, stirring frequently, until the mixture thickens to your desired consistency. Add water if needed to reach the preferred thickness.
Once cooked, remove from heat and set aside.
Stewed Apples:
In a separate saucepan or skillet, melt the butter or coconut oil over medium heat.
Add the chopped apples, yacon syrup, ground cinnamon, nutmeg (if using), and water to the pan.
Stir well to combine, then bring the mixture to a simmer.
Cook the apples for about 5-7 minutes or until they are tender and the liquid has slightly thickened, stirring occasionally.
Remove from heat.
Serving:
Pour the prepared porridge into a bowl.
Top the porridge with the stewed apples and any extra sauce from the apple mixture.
Sprinkle a little extra cinnamon on top for added flavour if desired.
