Porridge with Stewed Apples

You Will Need

Porridge

  • 1/2 cup rolled oats

  • 1 cup of plant based milk

  • 2 tablespoons of vanilla protein powder

  • 1 tablespoon yacon syrup

  • 1/2 teaspoon of vanilla extract

  • 1/2 teaspoon cinnamon

Stewed Apples

  • 2 apples, peeled, cored, and chopped into small pieces

  • 1 tablespoon grass-fed butter or coconut oil

  • 1 tablespoon yacon syrup

  • 1 teaspoon ground cinnamon

  • Pinch of nutmeg (optional)

  • 1/4 cup water

How To Make

Porridge:

  • In a saucepan, combine the oats, milk, protein powder, salt, honey/maple syrup, and vanilla extract (if using).

  • Cook over medium heat, stirring frequently, until the mixture thickens to your desired consistency. Add water if needed to reach the preferred thickness.

  • Once cooked, remove from heat and set aside.

Stewed Apples:

  • In a separate saucepan or skillet, melt the butter or coconut oil over medium heat.

  • Add the chopped apples, yacon syrup, ground cinnamon, nutmeg (if using), and water to the pan.

  • Stir well to combine, then bring the mixture to a simmer.

  • Cook the apples for about 5-7 minutes or until they are tender and the liquid has slightly thickened, stirring occasionally.

  • Remove from heat.

Serving:

  • Pour the prepared porridge into a bowl.

  • Top the porridge with the stewed apples and any extra sauce from the apple mixture.

  • Sprinkle a little extra cinnamon on top for added flavour if desired.
