Tofu Sushi Bowl

You Will Need

  • 1 packet of satay tofu

  • 1/2 cup of cooked brown rice

  • 1/2 cucumber chopped

  • 1/2 carrot chopped

  • 1/4 capsicum chopped

  • 1/4 cup edamamme beans

  • 1/4 avocado

  • 1/4 cup shredded purple cabbage

  • 1 radish thinly sliced

  • 1 packet crushed nori sheets

  • 1 tablespoon sesame seeds

Tahini Miso Dressing

  • 1/4 cup tahini

  • 1/4 cup water

  • 1 tablespoon tamari

  • 1 tablespoon miso paste

  • 1 tablespoon lime juice

  • 1 tablespoon rice wine vinegar

How To Make

  • Cook rice according to packet

  • Fry tofu in a fry pan with some coconut oil

  • Chop vegetables

  • Assemble all ingredients into a bowl

  • Mix all ingredients for the dressing and drizzle on top

  • Top with crushed nori sheets and sesame seeds
