High Protein Roasted Capsicum Pasta

You Will Need:

  • 1 block silken tofu (300g)

  • 200g jarred roasted red capsicum

  • 50g sun-dried tomatoes

  • 1 tbsp tomato purée

  • 1 small packet of spinach

  • ½ tsp each of smoked paprika, garlic powder, onion powder, and oregano

  • 1 tsp balsamic vinegar

  • 10g parmesan cheese

  • Salt and pepper

  • 100ml (approx) water to thin sauce

  • 200g pasta of choice (dry weight) - lentil pasta can help boost the protein content even more!

How to Make:

  1. Cook your pasta in a pan of salted boiling water according to packet instructions.

  2. While the pasta cooks, blend the tofu, roasted red capsicum, sun-dried tomatoes, tomato purée, spices, vinegar, parmesan, salt, pepper, and water until smooth and creamy. Add extra water if needed to thin.

  3. Pour the sauce into a pan and warm over low-medium heat. Stir in a splash of pasta water to thin and emulsify.

  4. Once the pasta is al dente, drain and add it straight into the pan with the sauce.

  5. Gently toss the pasta until fully coated in the sauce. Add in fresh spinach and mix until wilted.

  6. Top with breadcrumbs and parsley if desired.
